Ce qui est appelé clou correspond au bouton floral fermé de la plante et c’est à partir de la distillation de cette terminaison florale séchée que l’on obtient l’huile essentielle de giroflier. Au Moyen Age, le clou du giroflier entrait dans la composition de préparations antidouleurs et digestives. Aujourd’hui, les propriétés calmantes de l’huile essentielle sont reconnues. Son odeur rappelle les préparations dentaires, elle est épicée, puissante et piquante.
En cuisine, avec de la Cannelle, son arôme est détonant dans les préparations sucrées.
